Bubble and Squeak
Ingredients
- 1 can of yumeat™ Plant-Based Luncheon, cut into 2cm cubes
- ½ yellow onion, diced
- 600g mashed potatoes
- 400g cooked mixed vegetables, such as carrots, broccoli, capsicum, asparagus… anything you like, chopped up
- 40g or 4 tablespoons unsalted butter
- Black pepper
- Salt to taste
- Fried eggs and some side salad for serving (optional)
PREPARATION
- Melt the butter in a pan over medium heat. Add the onions and gently fry until soft and translucent.
- Add the plant-based luncheon. Cook until fragrant and slightly crispy.
- Stir in the mashed potatoes and cooked vegetables. Season with salt and black pepper.
- Occasionally press the mixture into the pan to brown (not to burn) and then turn to brown the other side.
- Serve with fried eggs and salad.
